葱、香菜、姜、大蒜、辣椒切粒,洋葱一半切粒,一半切条。豆瓣酱剁碎备好待用。

锅加入少量油,油热后加入备好的姜,蒜头,辣椒,葱,香菜,豆瓣酱。爆炒至闻到香味,加入开水煮沸5分钟。加入适量的酱油和陈醋。
锡纸刷油,鲈鱼铺在锡纸上,可用刚煮好的汤汁刷鱼身入味。包好锡纸。

不粘锅刷油,将包好的鲈鱼放入,中火煎10到15分钟。
