主要是白醋,做法你看看,泡久一点就又白又大了。
菜名:白云凤爪
主料:急冻鸡爪1斤(约600克),姜3片,葱3条,上汤1罐,白醋2汤匙。
配料:调味料:八角2粒,盐、砂糖各1茶匙。
做法: 1、将上汤加入调味料、白醋1汤匙半、姜、葱和蒜肉同煲滚,候凉放入冰箱冷藏备用。
2、将白醋半汤匙加入滚水里,倒入鸡爪煲约12分钟,取出,用冻开水冲洗干净。
3、把鸡爪浸在冻开水中约两小时,捞起沥干,放入(1)之上汤内浸约10小时便成。备 注: 心得:鸡爪浸在冻开水中可以使鸡爪的皮胀大,吃时更松软。白醋有漂白和令肉质更清爽可口的作用。

如果自己吃的话 食用碱 能起到鸡爪白嫩的效果但很一般 可是很安全 过于太白的一般都用比较刺激的化学制剂 对身体不好本回答被网友采纳
